Apple Cinnamon Quinoa Bites

This superfood is incredibly versatile, high in protein, low in calories and its gluten free! Seriously though, I eat Quinoa for breakfast lunch and dinner and always love finding a new way to make a snack with it.

These littleguys” are full of flavour, packed with nutrients and  are great for a grabandgo snack.

Ingredients:

  • 1.5 cups of cooked Quinoa
  • 1.5 cups of Quick Oats
  • 1.5 cups of chopped organic Apple (I like Gala Apples)
  • 1 1/2  tsp of Cinnamon
  • 1 tsp of Nutmeg
  • 3 tbs of Coconut Sugar (you can use brown sugar if you prefer)
  • 2 tbs of Real Maple Syrup
  • 2 Eggs (beaten)

Method:

Preheat your oven to 375.

Combine quinoa and quick oats. In a separate bowl combine cinnamon, nutmeg and sugar. Stir into the quinoa and oat mixture.

Add eggs, maple syrup and apples.

Grease a mini muffin tin with coconut oil (I like the flavour it gives but you can use a cooking spray or butter if you like.)

Fill the muffin tin with the mixtureI find it easiest to use a tbs to fill them, that way they are all even. *(the mixture should make 2 tins worth)*

Pop the tin(s) in the oven and bake for 2025 minutes.
Let cool and enjoy!

** I found they stuck a little bit to the sides when trying to pull them out. If you are having trouble as well just slide a knife softly around them in the pan and they should come loose**
