Banana Honey Muffins

Bake these irresistible Banana Honey Muffins using nutritious Manuka honey, which is perfect for Sunday breakfast especially if you love bananas like we do.

You can easily whip up these banana desserts for your family during weekend mornings. Make them smile as they walk into the kitchen and smell the freshly baked banana muffins!

Unlike cake baking recipes where the batter is smooth, the muffin batter will be lumpy. So do not be alarmed when you see the lumpiness as you mix with a fork, mix until batter is just mixed.

Ingredients:

  • 1 Large Banana; ripe and mashed
  • 1 Large Egg; beaten
  • 1/4 cup Manuka Honey; warm
  • 1 1/2 cup Whole Wheat Flour; sifted
  • 1/2 cup Black Raisins
  • 1 tsp Baking Powder
  • 1/2 cup Natural Yogurt

Method:

Preheat oven to 200°C. This recipe yields 12 muffins, so be prepared with greased 12 muffin tins.

Combine wheat flour and raisins. Mix in baking powder. Pour in beaten egg, Manuka honey and yogurt and finally the mashed banana. Mix until just well blended. Spoon immediately into greased muffin tins until 3/4 filled.

Bake in oven for 20 to 25 minutes or until muffins turn golden brown.
