Beef Carpaccio is a very tasty appetizer that is cooked quite easily! Like most of the successful recipes, carpaccio has many variations too. It has even turned into the common name for a group of appetizers cooked by cutting raw components into almost transparent slices.
- Beef fillet, 600 g
- Sea salt, to taste
- Egg yolks, 3
- Lemon juice, 1 tbsp
- Sugar, 1 tsp
- Olive oil, 150 ml
- Grated horse-radish, 1 tbsp
Wrap beef into foil and put into fridge for 1,5 hour. Then take it out and slice very thinly. Add salt and pepper and put into fridge for the same time again.
Now it’s time to cook sauce. Mix thoroughly egg yolks with a pinch of salt, sugar and lemon juice. Go on mixing and pour oil gradually. You must receive smooth mixture.
Add grated horse-radish into the sauce. Lay out beef slices and sprinkle with sauce. Garnish with greens.
