Black Bean and Salsa Potato Skillet

Black Bean and Salsa Potato Skillet is probably the healthiest recipe I’ve recently cooked. Cooking doesn’t take much time and the outcome is really delicious. If you want to differenciate your family’s dinner, it’s a nice option!

Ingredients:

  • 1 can (15 oz) black beans
  • 1/4 cup diced jalapeños
  • 2 russet potatoes, washed and chopped (skin on)
  • 1/2 yellow onion, diced
  • 1/2 cup shredded carrots
  • 1 12 oz. jar salsa
  • 1 can (15 oz) corn, drained
  • 1/4 cup chopped cilantro
  • seasoning salt
  • 3 cups water
  • shredded cheddar cheese and sour cream for topping, if desired

Directions:

First of all you need to place potatoes, jalapenos, onion, carrots, seasoning salt, and water in a pan with a lid. Having done this bring to a boil and simmer until potatoes are soft. If water runs out, add more to cook potatoes till the end. The next step is adding in corn, beans, salsa, and cilantro. Go on cooking until heated through. Top the dish with cheese and sour cream if desired. Enjoy with your dearest family!
