Blueberry Muffins

I know for sure Blueberry Muffins are favourite with many dessert lovers as they undoubtedly make the best tasting blueberry desserts around as far as homemade desserts go.

Muffin recipes can sometimes be a bit of a challenge, given the many aspects you will need to keep an eye on. That’s why we have created some tips and tricks to keep in mind when baking your favourite muffins.


  • 340 g Plain Flour
  • 1 1/2 tsp Baking Powder
  • 70 g Castor Sugar
  • 1/4 tsp Salt
  • 2 Medium Eggs; lightly beaten
  • 300 ml Fresh Milk
  • 90 g Butter; melted
  • 1 tsp Vanilla Essence
  • 180 g Blueberries; frozen


Sift plain flour with baking powder. Stir in castor sugar.

Meanwhile, whisk eggs with milk until creamy. Then add in melted butter, vanilla essence and salt. Beat well. Add into flour mixture. Stir in blueberries.

Spoon batter carefully into greased muffin tins until 3/4 full. Bake at 190°C for half an hour until muffins have risen and turned golden.

Best served warm over tea or coffee!
