Cabbage, Fennel and Parmesan Salad

One of my favorite side salads is this shaved cabbage and fennel salad with parmesanIt makes a change for usual cabbage salads we’ve used to cook.

Prep Time: 10 minutes

Serves: 46


  • ¼ green cabbage, shaved
  • 1 medium fennel, shaved
  • 1 head radicchio, leaves torn
  • 1 bunch rocket, leaves plucked (optional)
  • 100 g grated parmesan
  • 10o g small radishes, thinly cut
  • 100 g peas
  • ¼ cup extra virgin olive oil
  • ¼ cup white wine vinegar


Mix together and season with salt and pepper.

Note: Use a mandolin slicer to create very thinly shaved cabbage and fennel.
