One of my favorite side salads is this shaved cabbage and fennel salad with parmesan. It makes a change for usual cabbage salads we’ve used to cook.
Prep Time: 10 minutes
- ¼ green cabbage, shaved
- 1 medium fennel, shaved
- 1 head radicchio, leaves torn
- 1 bunch rocket, leaves plucked (optional)
- 100 g grated parmesan
- 10o g small radishes, thinly cut
- 100 g peas
- ¼ cup extra virgin olive oil
- ¼ cup white wine vinegar
Mix together and season with salt and pepper.
Note: Use a mandolin slicer to create very thinly shaved cabbage and fennel.
