  • 4 cups of sweet potatoes, peeled and chopped into cubes
  • 3 ½ cups of chicken stock or vegetable stock
  • 1 tablespoon of minced ginger
  • 1 piece of bell pepper, chopped into small cubes
  • tablespoon of oil
  • ½ cup of onions, chopped
  • 2 tablespoon of rum (optional)

Heat the soup pot to a medium or low fire and put the oil. When it is already heated, you can now add the onions and the curry paste. Cook it for four minutes and stir it occasionally. Check the heat and make some adjustment if needed. Add the ginger and garlic and cook for two minutes.

Now, you can already add your cubed sweet potatoes and the pepper. Mix the ingredients as you add the chicken or vegetable stock. Leave it to cook for 15 minutes.

When the vegetables and the other ingredients are already soft, you can now puree the cooked ingredients in a blender. Do this in batches in order to make sure that you can get a good consistency.

You can add more salt and chicken stock. Serve the soup in individual bowls. You can consider topping it with sweet paprika. A sprinkle of this can add thrill to the taste of your soup.
