A quesadilla is a tortilla filled primarily with cheese. Originating in Mexico, the name derives from the Spanish word queso meaning cheese. They make a perfect weekend lunch and are extremely moreish.

- 1 avocado
- juice of 1 lime
- 8 tortillas
- 650g chicken breast, grilled
- ½ red onion, thinly sliced
- 2 cups grated cheddar cheese
- ¼ cup smoky barbeque sauce
- 2 teaspoons minced chilli
- spray oil
Preheat oven to 150C. Mash the avocado and mix with the lime juice.
Lay out 4 tortillas and spread each with the avocado mix, followed by red onion, chicken and cheese.
Mix the barbeque sauce with the minced chilli and drizzle over the top of each tortilla, season and place the remaining tortillas on top of each tortilla.
Heat a non–stick fry pan over a medium heat. Spray with oil and fry tortillas one at a time 2–3 minutes each side or until cheese is melted and the tortillas are lightly browned.
Keep warm in oven whilst you cook the remaining tortillas.
Cut into triangles and serve.
