What do you think about adding to your favourite ice-cream some yoghurt, veggie and fruit? You won’t believe but this combination makes a tasty and yseful dessert.
- 1/2 cup ice cream
- 1/2 cup yoghurt
- 1/2 cup finely grated carrot
- 2 tbs honey
- 1 banana
Fix the whole peeled banana at the bottom of the mold (I used a square plastic container), set aside.
Mix yogurt and honey. Add ice cream and finely grated carrot (I used chocolate ice cream but a white color ice cream makes a contrast with carrot’s orange color and looks more beautiful). Pour into the mold, up to 1/4 inch above the banana. Pop in the freezer for 30 minutes until it’s totally set.
Unmold into serving dish, use a sharp thin blade knife, cut into 1/4 inch thick pieces. Garnish and enjoy (I used the crystallized coconut and grated carrot for decoration).
