This is really easy healthy recipe which is quick to make and there is no need to fold or sieve anything. Just mix the ingredients together and bake, yes, basically. If you do not like your pudding sweet, there is a way out. Just remove the brown sugar from the recipe. Instead, only drizzle with a little honey after the pudding is baked for flavour.

- 900 ml Hot Boiling Low Fat Milk
- 2 Large Eggs
- 3 tbsp Brown Sugar
- 1/4 tsp Salt
- 1 tsp Lemon Essence
- 2 tbsp Butter; room temperature

Meanwhile, beat eggs with sugar until light and creamy. Pour egg mixture onto the bread mixture. Add lemon essence and salt stir for a minute. Add small dollops of butter here and there onto pudding mixture. Stir in raisins until just blended. Sprinkle generously with pecans before sprinkling with cinammon powder.
