I whipped these up on a whim. I wanted a cookie that wasn’t terribly sweet. I wanted the chocolate chips to stand out. I indulged in 3 and then sent the rest to work with my husband. He said they were a hit! He told me he was even quizzed by a few of his coworkers who wanted to know what about these cookies was different from a regular chocolate chip cookie because there was no taste difference! Gluten free can be delicious!
Makes roughly 36 cookies
- 1 cup coconut sugar
- 1/4 cup raw honey
- 1 stick of unsalted butter
- 2 eggs
- 1 TB vanilla extract
- 2 1/4 cups Namaste Foods Gluten Free Flour Blend (found at my local Costco)
- 1/4 cup crunchy peanut butter
- 3/4 cup chocolate chips (I used Enjoy Life brand)
- 1 tsp baking soda
- a pinch of salt
Preheat the oven to 350 degrees.
In a stand mixer fitted with the whisk attachment add the softened butter, coconut sugar, raw honey and whisk together until the sugar dissolves.
Add in the peanut butter and eggs and whisk again. Add in the flour, baking soda, salt and vanilla extract and whisk until just combined. Fold in the chocolate chips.
Using your hands, grab roughly two tablespoons of dough and roll into a ball. Place on a baking sheet and bake for exactly 11 minutes. Remove and place on cooling rack for 10–15 minutes.
