Healthy Multigrain Pudding

We recommend the use of multigrain bread in this healthy dessert recipe as it provides fibre to your diet and adds texture to the pudding as compared to the usual white bread variety.

For parties or family gatherings, you can serve healthy desserts for pudding desserts instead of the usual sweet milky bread puddings, so do try this recipe which will please the health conscious.


  • 230 g Multigrain Bread
  • 1 tbsp  Butter; softened
  • 1/4 cup Fine Sugar
  • 5 Medium Eggs; yolks and white separated
  • 1/2 cup Chopped Pecans
  • 1 tsp Cinnamon Powder
  • 1 tbsp Grated Lemon Rind
  • 1 tbsp Brandy


Toast multigrain bread and crush into fine breadcrumbs. Set aside first.

Stir butter with sugar and egg yolks for about 20 minutes before adding chopped pecans. Add cinnamon powder and breadcrumbs. Keep stirring. Add in lemon rind and brandy.

Whisk egg whites until stiff and frothy and mix into pudding mixture.

Bake in preheated oven at 170°C until pudding has set and turned golden brown. Serve hot pudding with brandy sauce.
