Kesar (Saffron) Ras-Malai

This dish has got all the chances to be one of the most adorable in your family!

Ingredients:

  • 250 g Chenna
  • 200 g Sugar
  • 1 Litre Milk
  • 1 tbsp Chironji
  • 20 Cashew (cut into small pieces)
  • 1520 shreds Saffron
  • 56 Cardamom (powdered)

Method:

Mash the Chenna well till it become soft. It should become very soft just like we make dough for chapattis.

Now make small small balls of desired size.

Take 100 g of sugar and water and heat it with high flame.

Once boiled put the above balls into it and keep the flame high. Balls will get double their size.

Meanwhile boil milk, let it boil till it gets half the volume.

Saute regularly, also put Saffron and dry fruits.

When the volume turns half put off the gas and put sugar & cardamom into the dish.

Now remove the balls from water and press them to remove excess water. Now put the balls into the milk.

Cool it and garnish with pistachios.
