The tinda and plural called tinday, also called Indian round gourd or apple gourd or Indian Baby Pumpkin. It is a tasty and nutritious vegetable. The Masala Tinda sabzi is a tastefully spiced vegetable made from round gourd (tinda) cooked with spices like cumin seeds, coriander powder, fennel powder, turmeric, red chillies etc. It is not only easy and quick to make but tastes great. Since it requires lesser cutting of vegetables, it may be an ideal choice if you are in hurry and wish to prepare your food within least possible time. It goes well with paratha or roti, you can also be served as a side dish along with dal (lentil) and rice.

- Round gourd/tinda- 500 grm ( peel and chopped into quarter peices)
- Cumin seeds- 1/2 tsp
- Turmeric powder- 1/3 tsp
- Chilli powder- 3/4 tsp
- Coriander powder- 3 tsp
- Fennel powder- 1 tsp
- Dried mango powder (amchur)- 1/2 tsp
- Oil- 2 tbsp
- salt to taste
Heat 2 tbsp oil in a wok and add the cumin seeds.
When cumin seeds crackle, add coriander powder, fennel powder, Red chilli and turmeric powder, stir for 30 seconds on low flame.
Add tinda and salt, mix well. Cover the lid and cook for 8-10 minutes or till the tinda are completely cooked. Stir occasionally in between so that it doesn’t stick.
Now add the dry mango powder, mix well and simmer for a minute.
Put the flame off, serve hot with paratha or Roti.
