Mascarpone Stuffed Jalapeños

Jalapeños stuffed with bacon, mascarpone, and cheddar cheese; theres something so right about this combination. Stuffed jalapeño pepper somehow always causes a reaction way beyond its minimalist recipe. The recipe for stuffed jalapenos could hardly be more simple: slice a bunch of jalapeños in half lengthwise, remove seeds, stuff with cheese and bacon, then bake for 10 minutes.

Jalapenos dissipate most of their fiery heat when baked and develop a mellow flavor that is the perfect partner with cream cheese, and the bacon adds a salty crispness that brings it all together. These stuffed jalapeños make a great party appetizer.
