Jalapeños stuffed with bacon, mascarpone, and cheddar cheese; there’s something so right about this combination. Stuffed jalapeño pepper somehow always causes a reaction way beyond its minimalist recipe. The recipe for stuffed jalapenos could hardly be more simple: slice a bunch of jalapeños in half lengthwise, remove seeds, stuff with cheese and bacon, then bake for 10 minutes.
Jalapenos dissipate most of their fiery heat when baked and develop a mellow flavor that is the perfect partner with cream cheese, and the bacon adds a salty crispness that brings it all together. These stuffed jalapeños make a great party appetizer.

- 4 ounces Mascarpone, room temperature
- 1/2 cup Lite Shredded
- 3 Cheese Blend
- 8 oz package Jalapeños, halved and seeded
- 1/2 teaspoon salt (more or less to taste)
- 2 slices Fully Cooked Uncured Bacon, chopped
Preheat oven to 450 degrees. In a small bowl, mix together mascarpone, bacon, and shredded cheese. Season with salt.
With a small spoon, fill each jalapeño half with about 1 tablespoon cheese mixture.
Place peppers on a foil–lined baking sheet and bake until the cheese is bubbly and lightly browned, about 10 minutes.
Allow to cool for 5 minutes before serving.
