Meatball & vegetables

This recipe is so easy, quick and delicious to make, yet healthy.

Ingredients:

  • 1 pound minced beef
  • 1 large onion, peeled and diced
  • 2 large potatoes, diced
  • 1 large tomato, peeled and diced
  • 3/4 cup green peas (frozen, canned or cooked)
  • 1/2 cup corn (frozen, canned or cooked)
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1/2 tsp turmeric (or 1 tbsp saffron dissolved in hot water)
  • 1 tsp ground coriander
  • 2 tbsp vinegar
  • 1 tsp sugar
  • 3 tbsp oil
  • salt& pepper

Method:

Sprinkle salt & pepper over the minced meat, mix and massage, form into small balls, set aside (you can fry them separately in some butter). Saute onion and oil in a non-stick large pan over medium heat, until lightly golden; add seasonings (turmeric, cumin, cinnamon, coriander, salt) stir to mix; add cubed potatoes stir for a couple of minutes until changed in color (add more olive oil if needed). Add meatballs and cover. Lower the heat, let steam for 30 minutes until balls are firm .

Take the cover off, spread the green peas and corn (if you are going to use frozen veggies, put them in a colander and run some warm water over them); add diced tomatoes all over the pan (I used canned tomatoes, if you want to use fresh tomatoes add it after you fried the potatoes and stir a few times). Cover and cook for 15 minutes.
