Mixed Vegetable Curry

This recipe belongs to Indian cuisine. It’s quite nourishing and makes a great dinner.

Ingredients:

  • 1 cup carrot sliced, boiled
  • 1 cup cauliflower
  • 1 cup beans
  • 1 cup peas
  • 1 cup potato
  • 1 tomato finely cut
  • 1/2 tsp coconut grated
  • 1/2 tsp ginger grated
  • 1/2 tsp garlic crushed
  • 3 green chilies
  • 1 tbsp sesame seeds
  • 1/2 tsp each cumin
  • 1/2 tsp mustard seeds
  • 1/2 tsp red chili powder
  • Salt to taste
  • 1 tsp lemon juice
  • 2 cloves
  • 1 inch piece cinnamon
  • 2 tbsp butter

Method:

1. Cut all the vegetables and boil them.
2. Drain the boiled vegetables, keep stock aside.
3. Blend together coconut, chilies, sesame seeds, cinnamon, and cloves in blender.
4. Heat butter, add seeds and let them splutter.
5. Add ginger, garlic and paste.
6. Fry for 34 minutes.
7. Add vegetables except tomatoes.
8. Add 1/2 cup stock.
9. Cover and keep on sim for 5 minutes.
10. Add salt, chili powder, tomatoes and cook till gravy is thick.

Serve hot with roti or naan.
