These are tasty cookies with rich mocha flavour. This simple recipe for macaroons would make great gifts for friends and relatives.
These macaroons are drop cookies so one important tip to remember is not to let baked cookies remain on cookie sheet too long once they are baked. The cookie sheet is still hot and will further bake the cookies and may burn them.
- 5 Egg Whites
- 150 g Chocolate Bar; grated 1
- 20 g Castor Sugar
- 1 tsp Coffee Pasteor Emulco
- 200 g Ground Almonds

Firstly you need to whisk egg whites until stiff and frothy. Add sugar by tablespoons and keep whisking until mixture is thick. Stir in ground almonds, grated chocolate and coffee paste.
Then using a spoon, drop spoonfuls of the macaroon mixture onto cookie sheet. Leave enough space between each macaroon to allow them to expand during baking. Don’t forget to insert some chocolate coins on top of drop cookies.
Bake at 170ºC in preheated oven for 15 minutes or until macaroons turn golden brown. Remove from cookie sheet to cool. Keep in airtight container.
