Omelet with vegetables is a classical breakfast. But to make it especially tasty is not always easy. The secret of a NOURISHING breakfast is adding some mayonnaise.
- Tomatoes, 2
- Eggs, 3
- Mayonnaise, 2 tbsp
- Greens, to your liking
- Fried bacon
- Salt, pepper, to taste
First prepare bacon for omelet. Chop it or cut into stripes and fry each side a bit.
Now you need to fry onions (cut into any pieces you like). Meanwhile scramble eggs and whisk them well. Add mayo, salt and pepper.
Add fried bacon too (or you may serve it separately like I did). Pour this mixture into the frying pan. Fry till ready. Sprinkle with chopped greens.
