I usually make my salmon in the oven with mango chutney. It’s good because I LOVE the sweetness it gives. However, last night I wanted a little bit sweet and spicy dish, so I tried a recipe that promised exactly that.
- 4 boneless salmon fillets (with or without skin side)
- 3 Tbs. Cajun Spice
- 1 Tsp. Brown sugar
- ½ Tsp. salt
- ½ c. Orange Marmalade (Seville Oranges)
- juice of half of large lime
- 2 Tbs. olive oil
