Paleo waffles are among my most beloved waffles. I cook them very often on weekends and all my family members enjoy them!
A simple swapping of ingredients and voila, paleo–friendly waffles!
- 1/3 cup almond meal
- 1/3 cup coconut flour
- 2 TB honey
- Stevia to taste
- 1/2 TB vanilla extract
- 3 eggs
- 1/2 tsp baking powder
- 1 to 2 TB of water
Combine all ingredients (except for the water) in a large bowl and mix well. If the mixture is too dry add a tablespoon of water at a time until you have the right consistency. (It should be very runny, like cake batter)
Follow your waffle maker’s instructions and enjoy!
