Peanut Mochi is quite substantial and gives a good filling for your stomach, yes, even one ball of mochi.
Once you make a bite….mmmmmmm… you’ll never resist eating it again!
Ingredients For the Dough:
- 200 g glutinous rice flour
- 2 tbsp corn flour
- 300 ml water
- 2 tbsp corn oil
For the Filling:
- 100 g roasted peanuts; unsalted
- 35 g fine granulated sugar
- 50 g fried glutinous rice flour
Prepare the filling by grinding the peanuts fine and mix it with fine granulated sugar. Leave aside first.
Mix together glutinous rice flour, corn flour and water until smooth with no lumps. Add corn oil and stir until the mixture is smooth and well blended. Steam this batter over high heat for 15 minutes.
After steaming, batter will become sticky. Stir dough a bit with a fork. You’ll find that it’s sticky yet solid.
As the dough is very sticky, you will need some glutinous rice flour to dust the dough off. This way the dough will nog stick to your fingers, while you try to form it.
Scoop a tablespoon of dough into the glutinous rice flour. Coat dough with flour and gently roll and press into a flat circle the size of your palm. Fill with enough peanut mix filling. Close the opening of the flat dough. Roll gently with your palm so that it becomes a smooth ball.
Dip the ball in water and coat with fried glutinous rice flour.
This recipe makes 12 balls.
