A very easy and useful dish for those who prefer healthy food!
- 8-10 Medium Beets
- 1 Big Onion
- Beet juice (The water beets cooked in)
- Garlic vinegar or plain vinegar
Note: The point about this pickle is to keep the right proportion of all the ingredients together, (given in the method). So you can simply have any amount by that balance.
Wash and cook beets as instructed in “Cooked beet“. Separate the cooked beets from the water. Allow beets to cool enough to handle, then remove skin (they should slip right off). Slice the beets (you can use a cookie cutter to form and shape the beets). Peel, wash, dry and slice the onion.
Choose a carefuly washed and dry jar. Place the beet pieces and oinion slices in alternate layers into the jar.
