- 1 pineapple
- 1/4 cup water
- 1 1/4 cup sugar
- 2 tbs lemon juice
Peal, core and cut pineapple into chunk pieces (it will shrink later). Place chopped pineapple and water in a pot on the stove, bring to a boil, lower the heat and cook for 30-45 minutes.
Pour sugar over, stir until the sugar is dissolved. Return it to a boil over medium heat. You will see it release lots of water. Now let it simmer over medium heat for about one hour or until the juice thickens. You can check thickness by placing a spoonful of jam’s syrup on a previously chilled plate, let it cool. Now push the edge of the jam with your finger. If it has reached the gel stage it has set, and the surface will wrinkle when the edge is pushed.
