Pineapple Lemon Sherbet

This frozen dessert is one of our chilled dietic dessert recipes which you will want to serve and enjoy with friends on a hot sunny afternoon. This sherbet is sugar free and pretty easy to make. All you need are canned pineapples, gelatine powder, low fat milk and a good mixer. If you want a creamier sherbet, you may add more milk. Such easy desserts will not take up much time. You can serve the dessert in mini glasses or bowls and decorate with mint leaves.


  • 400 g  Crushed Pineapple
  • 1 tsp Gelatine Powder, unflavoured
  • 2 tbsp Lemon Juice
  • 2 tbsp Sugar Substitute
  • 2/3 cup Dry Milk Powder; nonfat
  • 1/2 cup Icecold Water


You can buy canned pineapples. Drain the pineapples and keep the juice. Sprinkle gelatine powder into 1/2 portion of the pineapple juice. Cook this mixture over very low heat until gelatine has dissolved. Turn off heat. Add remaining pineapple juice gradually. Stir gently and add in lemon juice, crushed pineapple and sugar substitute. Allow to cool.

Meanwhile, beat milk powder with 1/2 cup of ice water at high speed until stiff peaks form. Stir in the cooled gelatine mixture until wellblended. Pour into desired glasses or bowls and freeze sherbet for at least 4 hours. The sherbet is ready to be served when it is firm.
