I often saw prickly pears make an appearance on many menus, but I’ve never tried one. This time I’ve decided to try it and it turned out delicious!
It’s nature’s neon! This is such a refreshing summer beverage! This would even be fantastic as a granita or even a popsicle (surprise, surprise!)
- 4 cups boiling water, divided
- 2 bags of tangerine tea (I used Sweet Tangerine Positive Energy by Yogi Tea)
- 1 prickly pear fruit, skinned
- 2 TB raw honey
- 2–3 TB raw sugar
- juice of 1/2 a lime
In a large container add two cups of the boiling water and 2 tea bags and lime juice, steeping for 5 minutes. In a high speed blender add the rest of the boiling water and the prickly pear fruit. Pulse on variable speed 3 until the prickly pear is mixed, about 5–10 seconds.
Don’t try to pulverize the seeds. Using a fine mesh sieve, strain the prickly pear water into the steeped tangerine tea. Add the sugar and raw honey and stir till dissolved.
Serve chilled with basil garnish (optional.)
