If you have little time for cooking, try this rice and tomato soup for dinner! It’s quick to cook and tastes just wonderful.
- Rice, 150 g
- Tomato paste, 3 tbsp
- Bell pepper, 1
- Carrot, 1
- Potatoes, 3-4
- Pepper mix, 0,5 tsp
- Salt, to taste
- Water, 2 liters
- Oil, 2 tbsp
- Garlic, 2 cloves
- Bay leaf, 1-2
Wash rice several times till water gets transparent. Pour 2 liters of water into a pan with rice on the stove.
Meanwhile, peel potatoes, dice and put them into the pan too. Bring to a boil, make the heat lower and take away foam. Boil 10 minutes.
Thinly dice onion and fry on oil till it gets transparent. Dice carrot too. Add it to onion and stew 3 more minutes.
Now it’s time to add diced pepper. Stew several minutes. Add tomato paste. Add sliced garlic. Now sprinkle the mixture with spices. Stew 2 more minutes.
Add it to soup and salt to taste. Boil 5-7 minutes.
