Rustic Chicken, Bean and Bread Bake

This is a one dish wonder! No mess and little preparationjust put it in the oven and leave until it’s almost ready. It also has tonnes of flavour. Topped with a mix of crispy yet slightly moist sourdough, who could resist? Ideal for the busy mum or dad, and a hit with the family. Everyone will be coming back to ask… “Is there any more?”

Prep Time: 10 minutes

Cook Time: 40 minutes

Yield: Serves 4


  • 8 chicken drumsticks
  • 1 x 400g can cherry tomatoes
  • 1 x 400g can cannellini beans, rinsed
  • 1 medium fennel, thinly sliced
  • 1 capsicum, seeded and cut into 3cm squares
  • 4 cloves garlic, peeled
  • 2 shallots, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 vine ripened tomato, roughly chopped
  • 1 teaspoon smoked paprika
  • juice of 1 lemon
  • 200g sour dough, torn into large pieces
  • extra virgin olive oil, extra


Preheat the oven to 200c. Combine the ingredients except the sour dough into an oven large oven proof dish. Bake in the oven for 30 minutes or until the chicken is almost cooked.

When chicken is almost cooked place the pieces of sour dough on top of the ingredients and place, drizzle the bread pieces with the extra oil and place back in the oven for a further 10 minutes or until chicken is cooked and the bread is toasted.
