Savory Becon Veggie Oats

Have you alsways preferred your oats sweet? This recipe may change your preferences!

I had never really thought of adding anything to my oats besides my beloved peanut butter and some maple syrup or some other concoction to make me think I was eating dessert. That is until I made this one time for lunch. Now I really love it! One serving of this oat bran not only has 10 grams of protein, but also 7.5 grams of fiber. Add the extra goodness of veggies and bacon and you have a complete and filling meal! This recipe serves ONE, but can easily be doubled, tripled, etc.


  • 2 slices turkey bacon (pork bacon works just as well)
  • 1/4 cup oat bran
  • 100 grams asparagus (about 10 spears)
  • 3 oz. fresh mushrooms (about 3)
  • Sea salt and pepper


In a small pan, fry the bacon. In a small pot, bring 3/4 cup of water to a boil. Lower heat to medium, add oat bran, and cook until done, stirring often.

While all this is happening, prepare your veggies. Clean and chop your mushrooms, pop the tough ends off the ends of your asparagus spears, and chop.

Remove the bacon and let cool, slightly, then toss the veggies into the same pan. Sprinkle with salt and pepper and stir the veggies frequently until slightly brown.

Chop the bacon, put it in a bowl, top with the cooked oat bran and veggies. Stir and enjoy!
