This scrumptious Savoury Low Carb Cheesecake is perfect for those on a low carb diet. This low carbohydrate desserts will satisfy those who want a change from the usual sweet cheesecakes in baking recipes. Most of the cheesecake recipes use regular cream cheese.
However, this recipe uses aged Asiago cheese, an Italian cow’s milk cheese which is known to be high in calcium (226 mg for 28g of Asiago cheese). The aged variant is crumbly in texture as compared to the smoothness of the fresh Asiago. This cheese type is recommended as part of a healthy balanced diet and will be ideal if you’re on a low carbohydrate diet.
- 350g Grated Aged Asiago Cheese
- 570g Cream Cheese; room temperature
- 4 Large Eggs
- 1 clove Garlic; minced
- 1/4 tsp Dried Tarragon
- Salt to taste
- Pepper to taste
Preheat oven to 180 °C.
At first you need to beat asiago and cream cheese with a mixer until smooth. Add eggs one at a time. Please, beat well with each addition. Add garlic, followed by tarragon. Blend well. Add salt and pepper to taste.
Pour into a greased 8” spring form pan. Bake for about 45 minutes or until cake has turned golden. The center must not be wobbly. Remove from oven. Allow to cool for half an hour before cutting.
