- 200 g Butter Poundcake; evenly cut lengthwise
- 250 g Mascarpone Cheese; at room temperature
- 1 cup Heavy Cream
- 2 Medium Eggs
- 1 cup Brown Sugar; split into 3/4 cup and 1/4 cup
- 1 packet Gelatine Powder
- 1/2 tsp Vanilla Essence
- 5 tbsp Kahlua
- 5 tbsp Cocoa Powder; for decoration
Arrange cake slices evenly on the base of the cake tin. Set aside.
Beat cheese with heavy cream until well–blended. The cheese mixture is ready for use when it falls like ribbon trail from the spoon. Set aside.
Whisk eggs until fluffy. Set aside first. Meanwhile, boil 3/4 cup sugar with 1/4 cup water until sugar has completely dissolved. Add this syrup into beaten egg mixture and beat well until batter has cooled. Leave aside.
Prepare gelatine as per packet instructions, set aside first. Separately, boil remaining sugar with 1/2 cup water until sugar dissolves. Turn off heat. Add in kahlua and vanilla essence. Stir in gelatine mixture until gelatine dissolves. With a large spatula, fold in this mixture into the egg mixture. Once well–blended, fold in cheese mixture gently. Set aside for 5 minutes.
Pour this mixture gently onto the pre–arranged cake slices until well–covered. Chill overnight. To serve, sprinkle the top lightly with cocoa powder using a coffee strainer.
