Skewers Recipe: Pickled Vegetables

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Makes: 4 servings

Ingredients:

  • 4 spring onions
  • 1 yellow pepper
  • 24 cherry tomatoes
  • 1 small zucchini
  • Olive oil
  • Herbs

Method:

Wash all the vegetables. Peel the onions and zucchini (peel a strip of two to keep some skin). Cut the peppers. Cut the onions into quarters, wholesale dice peppers, and zucchini into slices 1/2 cm thick and overlap the washers in two.

On wooden skewers, sting vegetables (alternating them). Place vegetables skewers in a large plastic box. Sprinkle herbs de Provence on skewers and generously drizzle with olive oil. Close the lid of the box and refrigerate for 23 hours.

Meanwhile, stir frequently the box in all directions for the oil and herbs to be spread well over the vegetables.

Finally bake about 10 minutes on a hot grill.
