There are three reasons why I’m a big quiche fan.
It’s easy to make.
It keeps well in the fridge.
It tastes DELICIOUS.
Granted, if you aren’t a spinach fan, then this probably isn’t for you. But if you enjoy the green leafy goodness that is spinach, you have GOT to make this.
- 10 ounces of frozen spinach
- 1 cup Simply Potatoes Southwest Style Hash Browns
- 1 cup of zucchini (diced)
- 1 small onion (diced)
- 1/2 TB Kerrygold garlic and herb butter
- 1/2 cup of your favorite salsa
- 1/2 cup milk
- 4 eggs
- 1/4 cup shredded cheddar cheese
- 1 pre made piecrust
Defrost the spinach overnight.
Preheat the oven to 350 degrees.
Prepare your piecrust according to package directions.
In a large pan add 1/2 TB of the garlic and herb Kerrygold butter and saute on medium heat the spinach, zucchini, onion and Simply Potatoes Southwest Style Hash Browns. Cook the mixture until the zucchini is just starting to brown. Let the mixture cool then transfer to a blender or food processor,add the eggs, salsa and milk and blend until smooth.
Pour the mixture into the piecrust, top with cheddar cheese, place on the baking sheet and bake for 45–55 minutes until the center is set.
