My mom used to prepare this wonderful dish. She tops her steamed yam cake generously with fried dried shrimps. So, recalling the way my mom did it, I went about with the yam recipe that I have and tweaked it according to my preference. Since we do not have sweet sauce to go with it, we enjoyed it with chilli sauce.
You cannot pretty much eat many slices as they are often served rather generously – two slices is about more than enough. This Chinese cake is very filling, in fact, good enough as lunch or dinner.
- 300 g Rice Flour
- 2 1/2 bowls Warm Boiled Water
- 1 tbsp Corn Flour
- 2 Onions; sliced thinly
- 1 bowl Dried Shrimps; chopped
- 1/2 Small Yam; cut into cubes
- 6 slices Lean Pork; marinated with pepper
- 1 tsp Five Spice Powder
- 1 tsp Pepper
- 1 tbsp Dark Soya Sauce
- 2 Red Chillies; coarsely chopped
- 1 stalk Spring Onions; finely chopped
- Cooking Oil
Set aside chopped chillies, spring onions, onions and dried shrimps.
Mix rice flour, corn flour and water until smooth. There must be no lumps. Leave aside first.
Fry sliced onions until golden brown. Remove and set aside.
Fry half of of dried shrimps and leave aside first.
Prepare steamer, on high heat.
On a clean saucepan with heated oil, stir fry yam cubes for a minute or two. Add marinated pork and remaining dried shrimps. Sprinkle with pepper. Continue to stir fry. So that the yam cubes cooked quicker, sprinkle with water as you stir fry. Cover for a minute. Stir fry again. Drizzle with dark soya sauce and five spice powder. Stir until well blended.
When yam cubes are cooked (you can test a cube or two as you cook), lower heat and spoon over the rice flour batter. The paste will thicken very quickly. Stir gently for a minute and turn off heat.
Quickly spoon yam batter onto prepared dish which is already in the steamer. Pat the surface flat. Steam at high heat for 45 minutes. Check water level after 20 minutes. Add water if necessary and if you did, add another 10 minutes to steaming time.
Remove from heat and allow to cool for 30 minutes. Garnish with dried shrimps, fried onions, chopped red chillies and spring onions (or in any other way to your liking).
Serve with sweet sauce or chilli sauce.
