Try this Stir Fried Yee Mee dish, a Chinese noodle recipe that is ideal for busy families, especially those who do not have time for dishes that require much preparation.
So what is yee mee? Yee Mee are egg noodles that have been fried and dried, hence they are brown in colour.
- 2 patties Yee Mee
- 2 chicken sausages; sliced
- 2 eggs
- 2 handfuls long bean; sliced into 1–inch
- 2 cloves garlic; coarsely minced
- 1 cube anchovies seasoning
- 2 tsp soy sauce
- 1 tbsp dark soy sauce
- 1 small bowl water
- Pepper; to taste
Heat oil in wok over medium heat. Stir fry minced garlic until fragrant. Add in chicken sausage cubes and continue to stir. Add in long bean nest. Drizzle soy sauce and sprinkle pepper to taste.
Drain noodles and add in water. Add in dark soy sauce. Stir and lower heat. Allow noodle to cook. When gravy starts to dry up, turn off heat. Stir awhile and dish out to serve.
On a clean wok, fry eggs separately (bull eye’s) and serve onto noodle.
