Strawberry Rhubarb Pie

Even though it has been a trial, I have loved experimenting in the kitchen, making all sorts of glutenfree dishes. This is one of them. Now, being glutenfree is easy! This Strawberry Rhubarb Pie is one of my favourite among gluten-free pies. The ingredients are quite unusual but the outcome is just amazing! This pie is ideal for any party or celebration of any event.

  • 1 prepared, unbaked GlutenFree pie crust
  • 2 cups strawberries, hulled and quartered
  • 3 cups rhubarb, cut into ¾inch pieces
  • 4 Tbs. water
  • 1 Tbs. lemon juice
  • 1/2 cup light brown sugar
  • 1/4 cup plus 1 tablespoon granulated sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 1 pinch fresh black pepper
  • 3 Tbs. arrowroot (or tapioca starch or cornstarch)
  • 1 tsp. orange zest
  • 1 tsp. cornstarch or leftover pie crust flour
  • 1 egg
  • 1 Tbs. milk (I used almond milk)
  • 1 Tbs. raw sugar
