Sugar Free Lemon Bars

You will be pleasantly surprised by easiness of this recipe! Besides, it’s useful and yummy!


  • 1 cup Dates; chopped 
  • 1/4 cup Sugar Substitute
  • 1/3 cup Vegetable Oil
  • 1/2 cup Lemon Juice
  • 1 cup Whole Grain Wheat Flour
  • 1 tsp Baking Powder
  • 1/2 cup Chopped Pecans1 Large Egg; lightly beaten
  • 1 tbsp Grated Lemon Rind


Cook chopped dates with sugar sweetener and oil. Simmer until dates become tender and soft. Turn off heat before adding lemon juice. This will maintain the zestiness of lemon. Allow to cool.
Fold in flour and baking powder, then followed by chopped pecans. Add in beaten egg. Lastly, add in lemon rind. Bake at 190°C for half an hour.

Let it cool completely before cutting into bars.
