Sugar Free Pumpkin Pie

This Sugar Free Pumpkin Pie recipe is simple and easy to make. In fact, it is a no bake dessert that is very healthy, tasty and sugar free too.

Ingredients:

  • 1 8inch pie shell; baked
  • 2 packets sugar free instant vanilla pudding mix
  • 1 cup low fat milk
  • 1 cup mashed pumpkin; flavoured with pinch of salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ginger extract
  • 1/2 tsp ground cinnamon
  • 1 cup low fat whipping cream

Method:

Mix pudding mix with milk. Stir pudding mixture with mashed pumpkin until well blended. Add in ground spices and ginger extract. Pour mixture into pie shell. Chill well until set. Garnish with whipping cream.
