Scrumptious Sultana Cookies from our great dessert recipes is one of the favourite best desserts for cookies which you may want to bake for tea time or serve during festive ocassions.
- 1 cup self-raising flour; sifted
- 1/2 cup butter; melted
- 2/3 cup fine granulated sugar
- 1 large egg; lightly beaten
- 1 tsp vanilla essence
- 1 1/2 cups sultanas*
- 1 cup cornflakes; crushed
Mix together sifted flour with sultanas and sugar. Add in beaten egg and vanilla essence. Use a wooden spoon for mixing. Drizzle in melted butter and mix well. After that roll out lengthwise and cut into even portions.
Press each portion lightly with a fork onto greased cookie sheet. Now press lightly crushed cornflakes onto each cookie.
Bake at 180°C for a quarter of an hour. Allow to cool before storing in airtight container.
*Small, light brown, seedless raisin used in foods such as puddings and cakes.
