Tasty Salmon Mix

You can enjoy this dish just by itself, but I usually have it with brown rice. I buy huge pieces of salmon blocks and split half per serving and marinated them with Chinese wine, pepper and salt. As for the mix, I prepare a colourful combination of eggplant, shitake mushrooms and red and green bell peppers, the dish looks good with bell pepper colours. This is one of the easiest salmon recipes.


  • 1 salmon block
  • 2 small eggplant
  • 1 red bell pepper
  • 1 green bell pepper
  • 6 shitake mushrooms
  • 2 cloves
  • Garlic; minced
  • 2 tbsp black pepper sauce
  • 1 tbsp dark soya sauce
  • 1 tbsp Chinese wine
  • 1/4 cube chicken essence
  • 1 tsp brown sugar
  • Salt to taste


Cut salmon block into half and marinate with salt, pepper and Chinese wine for 20 minutes. Once marinated, bake in oven at 220°C until cooked.

Meanwhile, cut eggplants, mushrooms and bell peppers into small cubes. Heat wok with oil. Over medium heat, stir fry garlic first. Then add mushrooms. Add black pepper sauce over. Stir fry for 5 minutes before adding the rest of the vegetables. Sprinkle with salt, sugar, dark soya sauce and seasonings. Keep stir frying for another 5 to 8 minutes.

Turn off heat. Now spoon this colourful mix over the baked salmon. Serve with rice, if desired.
