Turkey Meatballs are so easy to thaw out for a quick lunch or even snack and they are family–approved as well!
I have been making double batches of these meatballs for a little while now and throwing them into the freezer.
- 1 large package of ground turkey (26 oz.)
- 1 medium zucchini, shredded
- 1/4 cup onion, diced
- 8 grape tomatoes, chopped into tiny pieces
- 1 tsp salt, or to taste
- 1/2 tsp pepper
- 2 T dried oregano
Preheat oven to 375–degrees. Place all ingredients into large bowl.Mix it all up with your hands until well blended.
Form into 10 meatballs, a little smaller than a tennis ball. They will mound out of your muffin pan like a, well, muffin.
Put into a greased muffin tin. Bake for 60 minutes.
