These lentil burgers are perfect in a pita, sandwich, wrap, or by themselves. For this recipe I have kept it simple but you are to free to experiment with your own favorite flavors and spice them up however you like. Though these burgers are vegetarian my husband and kids like them too. So, I cook them occasionally for a change. The taste is great, this I can tell for sure!
Yield: 12 lentil burgers

- 1 17.6 oz box steamed lentils
- 4 large eggs
- 1/2 teaspoon fine–grain sea salt
- 2 cloves garlic, minced
- 1/2 cup cilantro, chopped
- 1 onion, finely chopped
- 1/2 cup corn
- 1 cup organic bread crumbs
- 1 tablespoon olive oil
First you need to put the lentils, eggs, salt, garlic, and cilantro into a food processor and pulse until fully combined. Don’t worry if some of the lentils remain whole.
Then pour the lentil mixture into a suitable bowl and stir in the onion, corn, and bread crumbs. Leave this aside for several minutes. Make sure the crumbs have absorbed some of the moisture.
Adjust the dough texture if needed by adding bread crumbs, water, or more egg. Form the mixture into 12 patties.
Meanwhile you need to heat the oil in a large skillet over medium low. Then add 4 patties and cover. You are to cook them for several minutes (no more than 5). Check from time to time if the bottoms begin to brown, but don’t over cook.
Now it’s time to flip the patties and cook the second side for some more minutes, or until they become golden.
Here comes the last stage. Remove from the skillet and cool on a wire rack. Cook the remaining burgers according to the same principle.
Serve with your favorite burger garnishes.
