Watermelon Granita with Strawberries and Champagne

This is a really refreshing way to end a meal, and great when you dont want to serve a heavy dessert. It is a favourite in my family and friendsand always proves a hit time and again.

Prep Time: 10 minutes

Yield: Serves 68


  • 150 g caster sugar
  • 150 ml water
  • 650 g peeled seedless watermelon, cut into chunks
  • 1 tablespoon lime juice
  • 150 ml champagne or sparkling wine
  • 1 punnet strawberries, hulled and halved


To make sugar syrup, place sugar and water in a small saucepan over a high heat, bring to the boil and allow to cool.

For the granitapuree watermelon chunks in a food processor. Mix in 100 ml of the sugar syrup along with the lime juicePour into a container and place in the freezer over night. Once frozen, scrape granita with a fork to make flakes.

Mix 150 ml champagne with 75 ml sugar syrup in a medium bowlAdd the strawberries and divide the strawberries and champagne syrup into serving glassesTop with the granite and serve.

Note: Make the granita component a day ahead
