This is a really refreshing way to end a meal, and great when you don’t want to serve a heavy dessert. It is a favourite in my family and friends – and always proves a hit time and again.

Yield: Serves 6 – 8
- 150 g caster sugar
- 150 ml water
- 650 g peeled seedless watermelon, cut into chunks
- 1 tablespoon lime juice
- 150 ml champagne or sparkling wine
- 1 punnet strawberries, hulled and halved
To make sugar syrup, place sugar and water in a small saucepan over a high heat, bring to the boil and allow to cool.
For the granita, puree watermelon chunks in a food processor. Mix in 100 ml of the sugar syrup along with the lime juice. Pour into a container and place in the freezer over night. Once frozen, scrape granita with a fork to make flakes.
Mix 150 ml champagne with 75 ml sugar syrup in a medium bowl. Add the strawberries and divide the strawberries and champagne syrup into serving glasses. Top with the granite and serve.
