As a kid, I remember waking up to the delicious smell of pancakes. It never took me as long to get out of bed those mornings. We always smothered ours in peanut butter and syrup and to this day this is one of my favorite meals. I am so excited to be able to create a gluten–free, dairy–free pancake and waffle recipe that I can enjoy with my family. And one of the best parts of this recipe is that it is SO EASY to make! I hope you enjoy this recipe as much as my family does.
- 2–3/4 cup So Delicious coconut milk
- 1/4 cup lemon juice
- 1–1/2 cups gluten–free steel cut oats
- 1–1/2 cups sorghum
The next morning, add…
- 2 T honey
- 2 T baking powder
- 1 t salt
- 6 eggs
- 2/3 cup coconut oil, liquified
Blend in a blender and pour into your Belgian waffle maker. Makes 9 Belgian waffles. Top these delicious waffles with maple syrup for a deliciously sweet and wholesome breakfast!
BONUS! This recipe makes great dairy–free, gluten–free pancakes as well! It makes 27 pancakes using generous 1/4 cup scoopfuls of batter.
