This recipe will tempt even anti-zucchini eaters! I could eat a whole pan myself!
- 750 gms Zucchini
- 3 tsp maida
- 4 Eggs
- 375 gms grated mozzarella cheese
- 2 tsp baking powder
- 1/2 cup milk
- Few breadcrumbs
- Salt to taste
In a vessel boil some water and add zucchini to it and cook till soft.
Strain it and remove excess water and let it cool down.
Slightly beat the eggs and in a bowl add milk, cheese, salt, baking powder and maida to it.
Now add this mixture to the above soaked zucchini.
Put this in a casserole with butter.
Garnish with bread crumbs and butter/cheese.
Bake for nearly 40 minutes under 350 degree F temperature.
